- 1 lb boneless, skinless chicken breasts, diced
- 9 oz cheese-filled tortellini
- 1 (15 oz) can diced tomatoes
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Cook tortellini according to package instructions, then drain.
- Heat olive oil in a skillet over medium heat. Add chicken and cook until no longer pink.
- Add garlic, Italian seasoning, salt, and pepper. Stir for 1 minute.
- Pour in diced tomatoes, heavy cream, and chicken broth. Simmer for 5 minutes.
- Mix in cooked tortellini and transfer to a baking dish.
- Sprinkle mozzarella and Parmesan cheese on top.
- Bake for 20 minutes or until cheese is bubbly and golden.
- Let cool for 5 minutes before serving.
