Description

Ingredients

  • 1 medium spaghetti squash
  • 1 tbsp olive oil
  • 1 cup sliced mushrooms
  • 2 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut spaghetti squash in half lengthwise and scoop out seeds.
  3. Brush with olive oil and place cut-side down on a baking sheet.
  4. Bake for 30-40 minutes until tender.
  5. Heat olive oil in a pan and sauté mushrooms and garlic until soft.
  6. Add spinach and cook until wilted.
  7. Stir in heavy cream and Parmesan cheese until creamy.
  8. Scrape spaghetti squash strands with a fork and mix with the creamy filling.
  9. Stuff the mixture back into the squash halves and serve.
