Ingredients

  • 8 oz medium pasta shells
  • 1 lb shrimp, peeled and deveined
  • 8 oz mushrooms, sliced
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook pasta shells according to package instructions. Drain and set aside.
  2. Heat olive oil and butter in a large skillet over medium heat.
  3. Add shrimp and cook for 2-3 minutes per side until pink. Remove and set aside.
  4. In the same skillet, sauté mushrooms until softened, about 5 minutes.
  5. Add garlic and spinach, cooking until spinach wilts.
  6. Pour in heavy cream and bring to a simmer.
  7. Stir in Parmesan cheese until melted.
  8. Return shrimp to the skillet and toss with the sauce.
  9. Add cooked pasta shells and mix well.
  10. Season with salt and pepper to taste.

  • Substitute half-and-half for heavy cream if you prefer a lighter dish.
  • Garnish with extra Parmesan before serving.
