- 8 oz medium pasta shells
- 1 lb shrimp, peeled and deveined
- 8 oz mushrooms, sliced
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook pasta shells according to package instructions. Drain and set aside.
- Heat olive oil and butter in a large skillet over medium heat.
- Add shrimp and cook for 2-3 minutes per side until pink. Remove and set aside.
- In the same skillet, sauté mushrooms until softened, about 5 minutes.
- Add garlic and spinach, cooking until spinach wilts.
- Pour in heavy cream and bring to a simmer.
- Stir in Parmesan cheese until melted.
- Return shrimp to the skillet and toss with the sauce.
- Add cooked pasta shells and mix well.
- Season with salt and pepper to taste.
Notes
- Use fresh shrimp for the best flavor.
- Substitute half-and-half for heavy cream if you prefer a lighter dish.
- Garnish with extra Parmesan before serving.
