Ingredients

- 12 lasagna noodles
- 2 cups fresh spinach
- 1 cup sliced mushrooms
- 2 cups ricotta cheese
- 1 cup shredded mozzarella

- 2 cups marinara sauce
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F.
- Cook lasagna noodles according to package instructions.
- Sauté garlic, spinach, and mushrooms in olive oil until tender.
- Mix ricotta cheese with salt and pepper.
- Layer marinara sauce, noodles, ricotta mixture, and vegetables in a baking dish.
- Top with mozzarella and Parmesan.
- Bake for 25 minutes or until bubbly.
- Let cool for 5 minutes before serving.
Notes
- Use fresh spinach for best results.
- Substitute mushrooms with zucchini if preferred.
