- 1 lb cooked shrimp, peeled and deveined
- 1 cup diced celery
- 1/2 cup diced red onion
- 1/2 cup mayonnaise
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped fresh parsley
Instructions
- In a large bowl, combine shrimp, celery, and red onion.
- In a small bowl, mix mayonnaise, lemon juice, Dijon mustard, salt, and pepper.
- Pour the dressing over the shrimp mixture and toss gently.
- Stir in chopped parsley.
- Chill in the refrigerator for at least 30 minutes before serving.

- Use fresh or frozen thawed shrimp for best results.
