  • 2 tbsp butter
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 tbsp all-purpose flour
  • 4 cups seafood or vegetable broth
  • 1 cup heavy cream
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion, garlic, carrot, and celery. Cook until softened.
  3. Sprinkle flour over the vegetables and stir to combine.
  4. Slowly pour in the broth while stirring to avoid lumps.
  5. Add tomato paste, paprika, salt, and pepper. Simmer for 15 minutes.
  6. Stir in the seafood and cook until just done (about 5 minutes).
  7. Pour in the heavy cream and heat through without boiling.
  8. Garnish with fresh parsley before serving.
