Ingredients

- 6 large tomatoes, halved
- 1 head of garlic
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cups vegetable broth
- 1/2 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried basil
Instructions
- Preheat oven to 400°F (200°C).
- Toss tomatoes and garlic with olive oil, roast for 30 minutes.
- Sauté onion in a pot until soft.
- Add roasted tomatoes, garlic, and broth to the pot.
- Simmer for 15 minutes, then blend until smooth.
- Stir in cream, salt, pepper, and basil.
- Serve warm.
