A creamy and comforting potato soup that’s easy to make.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp thyme

Instructions

  1. Melt butter in a pot over medium heat.
  2. Add onions and garlic, cook until soft.
  3. Add potatoes, broth, salt, pepper, and thyme. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes until potatoes are tender.
  5. Blend half the soup until smooth, then return to the pot.
  6. Stir in heavy cream and heat for 5 more minutes.
  7. Serve warm.

Notes

  • For a thicker soup, blend more of the potatoes.
  • Garnish with chives or shredded cheese if desired.
