- 2 cups fresh basil leaves, packed
- 1/2 cup grated Parmesan cheese
- 1/2 cup pine nuts (or walnuts)
- 2 cloves garlic, minced
- 1/2 cup extra virgin olive oil
- 1/2 cup heavy cream
- Salt and pepper to taste
- 1 pound pasta of your choice
Instructions
- Cook the pasta according to package instructions. Reserve 1 cup of pasta water, then drain and set aside.
- In a food processor, combine the basil, Parmesan cheese, pine nuts, and garlic. Pulse until finely chopped.
- With the food processor running, slowly drizzle in the olive oil until the mixture is smooth.
- Transfer the pesto to a large skillet over medium heat. Stir in the heavy cream and mix until well combined.
- Add the cooked pasta to the skillet, tossing to coat. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- Season with salt and pepper to taste. Serve immediately, garnished with additional Parmesan cheese if desired.
