Ingredients

  • 2 cups fresh basil leaves, packed
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup pine nuts (or walnuts)
  • 2 cloves garlic, minced
  • 1/2 cup extra virgin olive oil
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 1 pound pasta of your choice

Instructions

  1. Cook the pasta according to package instructions. Reserve 1 cup of pasta water, then drain and set aside.
  2. In a food processor, combine the basil, Parmesan cheese, pine nuts, and garlic. Pulse until finely chopped.
  3. With the food processor running, slowly drizzle in the olive oil until the mixture is smooth.
  4. Transfer the pesto to a large skillet over medium heat. Stir in the heavy cream and mix until well combined.
  5. Add the cooked pasta to the skillet, tossing to coat. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  6. Season with salt and pepper to taste. Serve immediately, garnished with additional Parmesan cheese if desired.
