- 2 boneless, skinless chicken breasts
- 1/4 cup sun-dried tomatoes, chopped
- 1/2 cup heavy cream
- 2 tbsp pesto
- 1 tbsp olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Season chicken breasts with salt and pepper, then cook until golden brown, about 5-6 minutes per side.
- Remove chicken from the pan and set aside.
- In the same pan, sauté garlic until fragrant, about 30 seconds.
- Add sun-dried tomatoes and cook for 1 minute.
- Stir in pesto and heavy cream, then bring to a simmer.
- Return chicken to the pan and cook for another 3-4 minutes until heated through.
- Serve hot.
