- 4 boneless, skinless chicken breasts
- 1/4 cup pesto sauce
- 1/2 cup heavy cream
- 1 lb baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 400°F.
- Toss potatoes with olive oil, salt, pepper, and garlic powder. Spread on a baking sheet.
- Roast potatoes for 25 minutes.
- Season chicken breasts with salt and pepper.
- Cook chicken in a skillet over medium heat for 6 minutes per side.
- Remove chicken and add pesto and heavy cream to the skillet. Stir well.
- Return chicken to the skillet and simmer for 5 minutes.
- Sprinkle with Parmesan cheese before serving.
