Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup pesto sauce
  • 1/2 cup heavy cream
  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F.
  2. Toss potatoes with olive oil, salt, pepper, and garlic powder. Spread on a baking sheet.
  3. Roast potatoes for 25 minutes.
  4. Season chicken breasts with salt and pepper.
  5. Cook chicken in a skillet over medium heat for 6 minutes per side.
  6. Remove chicken and add pesto and heavy cream to the skillet. Stir well.
  7. Return chicken to the skillet and simmer for 5 minutes.
  8. Sprinkle with Parmesan cheese before serving.
