Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 cup heavy cream
  • 1/4 cup pesto
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken with salt and pepper, then cook for 5-6 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, add garlic and sauté for 30 seconds.
  4. Pour in heavy cream and pesto, stirring until well combined.
  5. Add cherry tomatoes and simmer for 2-3 minutes.
  6. Return chicken to the skillet, coating it with the sauce.
  7. Sprinkle Parmesan cheese on top and serve.
