A quick and easy one-pan meal featuring tender chicken in a creamy pesto sauce.
Ingredients

- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1/2 cup heavy cream
- 1/4 cup pesto
- 1/2 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken with salt and pepper, then cook for 5-6 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds.
- Pour in heavy cream and pesto, stirring until well combined.
- Add cherry tomatoes and simmer for 2-3 minutes.
- Return chicken to the skillet, coating it with the sauce.
- Sprinkle Parmesan cheese on top and serve.
Notes
- Use store-bought or homemade pesto.
- Add spinach or mushrooms for extra veggies.
- Serve with pasta or crusty bread.
