Ingredients

  • 2 (8 oz) ribeye or sirloin steaks
  • 1 lb baby potatoes, halved
  • 8 oz cremini mushrooms, sliced
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss potatoes with olive oil, salt, and pepper, then roast for 25-30 minutes until golden.
  2. Season steaks with salt and pepper. Sear in a hot skillet with butter for 3-4 minutes per side for medium-rare. Let rest.
  3. In the same skillet, sauté mushrooms and garlic until tender. Pour in cream and thyme, simmer for 5 minutes.
  4. Slice steak and serve with roasted potatoes, topped with creamy mushroom sauce.
