Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup mushrooms, finely chopped
  • 2 cups fresh spinach, chopped
  • 4 oz cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté mushrooms and garlic until soft.
  3. Add spinach and cook until wilted. Remove from heat and let cool slightly.
  4. Mix the mushroom-spinach mixture with cream cheese, Parmesan, salt, pepper, and thyme.
  5. Cut a pocket into each chicken breast and stuff with the mixture.
  6. Secure with toothpicks if needed. Place in a baking dish.
  7. Bake for 25-30 minutes or until chicken reaches 165°F (74°C).
  8. Let rest for 5 minutes before serving.
