- 2 boneless, skinless chicken breasts
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 tbsp butter
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 2 medium potatoes, diced
- 1/2 tsp paprika
Instructions
- Season chicken with salt, pepper, and thyme.
- Heat olive oil in a pan over medium heat and cook chicken until golden, about 5-7 minutes per side. Remove and set aside.
- In the same pan, melt butter and sauté garlic and mushrooms until soft.
- Pour in heavy cream, stir, and simmer for 3 minutes.
- Return chicken to the pan and cook for another 5 minutes.
- Meanwhile, toss diced potatoes with paprika and roast in a preheated oven at 400°F for 20 minutes until crispy.
- Serve chicken with creamy mushroom sauce and crispy potato bites.
