Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup sliced mushrooms
  • 2 medium potatoes, diced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/4 cup basil pesto
  • Salt and pepper to taste

Instructions

  1. Season the chicken with salt and pepper.
  2. Heat olive oil in a pan and cook the chicken until golden brown. Set aside.
  3. In the same pan, melt butter and sauté garlic and mushrooms until soft.
  4. Add diced potatoes and cook until tender.

  7. Drizzle with basil pesto before serving.
