A delicious and easy-to-make dish featuring tender chicken in a creamy garlic sauce served with roasted baby potatoes.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the baby potatoes with 2 tbsp olive oil, salt, and pepper. Roast for 25 minutes or until golden and tender.
  3. Heat 1 tbsp olive oil in a skillet over medium heat. Season the chicken with salt, pepper, and paprika, then cook for 5-6 minutes per side until browned. Remove and set aside.
  4. In the same skillet, sauté the garlic for 30 seconds until fragrant.
  5. Add the chicken broth, heavy cream, and thyme. Simmer for 3-4 minutes until slightly thickened.
  6. Return the chicken to the skillet and cook for another 5 minutes until fully cooked.
  7. Serve the creamy garlic chicken with roasted baby potatoes, garnished with fresh parsley.

  • For extra flavor, add grated Parmesan cheese to the sauce.
  • Replace heavy cream with half-and-half for a lighter version.
