- 4 boneless, skinless chicken thighs
- 4 cloves fresh garlic
- 2 cups starchy potatoes (like Russets)
- 1/2 cup warm milk
- 4 tablespoons butter
- Salt to taste
- Pepper to taste
- Fresh herbs (like parsley or thyme) for garnish
Instructions
- Prepare the ingredients by gathering all necessary items.
- Peel and chop the starchy potatoes into even chunks.
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- While the potatoes are cooking, season the chicken thighs with salt and pepper.
- In a skillet over medium heat, cook the chicken thighs until golden brown and cooked through, about 6-7 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add minced fresh garlic and sauté until fragrant.
- Add cream to the skillet and stir to combine with the garlic, cooking for a few minutes until slightly thickened.
- Return the chicken to the skillet, coating it with the creamy garlic sauce.
- Drain the cooked potatoes and return them to the pot.
- Add warm milk and butter to the potatoes, mashing until smooth and creamy.
- Serve the chicken over the mashed potatoes, drizzling with extra garlic sauce and garnishing with fresh herbs.
Notes
- For the best flavor, use fresh garlic instead of pre-minced varieties.
