Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup long-grain rice
  • 2 cups chicken or vegetable broth
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice

Instructions

  1. Rinse rice and cook in broth until done. Fluff with a fork and mix in parsley and dill.
  2. Heat butter in a pan over medium heat. Add garlic and sauté until fragrant.
  3. Add shrimp and cook for 2-3 minutes per side until pink.
  4. Pour in heavy cream, salt, and pepper. Simmer for 2 minutes.
  5. Stir in lemon juice and remove from heat.
  6. Serve shrimp and sauce over herb rice.
