- 1 lb shrimp, peeled and deveined
- 1 cup long-grain rice
- 2 cups chicken or vegetable broth
- 3 tbsp butter
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lemon juice
Instructions
- Rinse rice and cook in broth until done. Fluff with a fork and mix in parsley and dill.
- Heat butter in a pan over medium heat. Add garlic and sauté until fragrant.
- Add shrimp and cook for 2-3 minutes per side until pink.
- Pour in heavy cream, salt, and pepper. Simmer for 2 minutes.
- Stir in lemon juice and remove from heat.
- Serve shrimp and sauce over herb rice.
