Ingredients

  • 1 lb prawns, peeled and deveined
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp vegetable oil
  • 1 cup jasmine rice
  • 2 cups water
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Cook jasmine rice according to package instructions.
  2. Heat oil in a pan over medium heat. Add onion and garlic, sauté until soft.
  3. Add red curry paste and cook for 1 minute.
  4. Pour in coconut milk, fish sauce, and brown sugar. Stir well.
  5. Add bell pepper and prawns. Simmer until prawns are cooked through, about 5 minutes.
  6. Serve hot over jasmine rice, garnished with cilantro and lime wedges.

Notes

  • Adjust curry paste for more or less heat.
  • Use fresh prawns for best results.
  • Can substitute shrimp for prawns.
