- 1 lb prawns, peeled and deveined
- 1 can (14 oz) coconut milk
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 red bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tbsp vegetable oil
- 1 cup jasmine rice
- 2 cups water
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Cook jasmine rice according to package instructions.
- Heat oil in a pan over medium heat. Add onion and garlic, sauté until soft.
- Add red curry paste and cook for 1 minute.
- Pour in coconut milk, fish sauce, and brown sugar. Stir well.
- Add bell pepper and prawns. Simmer until prawns are cooked through, about 5 minutes.
- Serve hot over jasmine rice, garnished with cilantro and lime wedges.
Notes
- Adjust curry paste for more or less heat.
- Use fresh prawns for best results.
- Can substitute shrimp for prawns.
