Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 can (14 oz) coconut milk
  • 1 cup jasmine rice, uncooked
  • 1 tbsp curry powder
  • 1 tbsp vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 bell pepper, sliced
  • 1 tbsp fish sauce
  • 1 tsp brown sugar
  • 1 lime, juiced
  • Fresh cilantro for garnish

Instructions

  1. Rinse the jasmine rice and cook according to package instructions.
  2. Heat oil in a large pan over medium heat. Add onion, garlic, and ginger. Sauté until soft.
  3. Stir in curry powder and cook for 1 minute.
  4. Add bell pepper and cook for 2 minutes.
  5. Pour in coconut milk, fish sauce, and brown sugar. Bring to a simmer.
  6. Add shrimp and cook until pink and opaque, about 3-4 minutes.
  7. Squeeze lime juice into the curry.
  8. Serve over jasmine rice and garnish with fresh cilantro.
