Ingredients

  • 1 lb boneless, skinless chicken breast, diced
  • 2 cups cheese tortellini
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated parmesan cheese
  • 1 cup baby spinach

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until browned, about 5 minutes.
  3. Add onion and garlic, sauté for 2 minutes.
  4. Pour in chicken broth and heavy cream, stir well.
  5. Add tortellini, Italian seasoning, salt, and pepper.
  6. Bring to a simmer and cook for 8-10 minutes until tortellini is tender.
  7. Stir in spinach and parmesan cheese until spinach wilts.
  8. Serve hot.
