- 2 boneless, skinless chicken breasts (about 1 pound), sliced into strips
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 tbsp butter
- 1 tbsp all-purpose flour
- 1 cup chicken broth
- 1 tbsp Dijon mustard
- 1/2 cup sour cream
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped fresh parsley (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until no longer pink, about 5 minutes. Remove and set aside.
- In the same skillet, melt butter and sauté onion and garlic for 2 minutes.
- Add mushrooms and cook until softened, about 5 minutes.
- Sprinkle flour over the mixture, stir well, and cook for 1 minute.
- Slowly pour in chicken broth, stirring constantly to avoid lumps.
- Add Dijon mustard, salt, and pepper. Simmer for 3 minutes until slightly thickened.
- Reduce heat to low, stir in sour cream, then return chicken to the skillet.
- Heat through for 2 minutes, garnish with parsley if desired, and serve hot.
Notes
- Swap chicken broth for beef broth for a richer flavor.
- For a dairy-free option, use coconut cream instead of sour cream.
- Store leftovers in an airtight container for up to 3 days.
