Ingredients

  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 1 lb chicken breast, cubed
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 cup heavy cream
  • 2 cups egg noodles
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in chicken broth and water. Bring to a boil.
  5. Add chicken, salt, pepper, and thyme. Simmer for 15 minutes.
  6. Stir in egg noodles and cook for 8 minutes.
  7. Reduce heat and add heavy cream. Simmer for 2 minutes.
  8. Garnish with parsley before serving.

Notes

  • For a thicker soup, mix 1 tbsp cornstarch with 2 tbsp cold water and stir into the soup.
