A comforting and creamy pasta dish with tender chicken and savory mushrooms in a rich sauce.
Ingredients

- 1 lb boneless chicken breast, sliced
- 8 oz cremini mushrooms, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup sour cream
- 2 cups chicken broth
- 2 tbsp all-purpose flour
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp paprika
- 12 oz egg noodles
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook egg noodles according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned and cooked through, about 6-8 minutes. Remove from skillet.
- Melt butter in the same skillet. Add onions and cook until softened, about 3 minutes.
- Add mushrooms and garlic. Cook until mushrooms are tender, about 5 minutes.
- Sprinkle flour over vegetables and stir to combine. Cook for 1 minute.
- Gradually whisk in chicken broth until smooth. Bring to a simmer.
- Return chicken to skillet. Stir in sour cream and paprika.
- Simmer for 2-3 minutes until sauce thickens.
- Season with salt and pepper. Serve over cooked noodles. Garnish with parsley.
Notes
- Use Greek yogurt instead of sour cream for a lighter version
- Add a splash of white wine for extra flavor
- Leftovers keep well in refrigerator for up to 3 days
