Description
A quick and easy one-pot pasta dish with creamy Cajun flavors and smoked sausage.
Ingredients

- 1 lb smoked sausage, sliced
- 8 oz penne pasta
- 1 tbsp olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 2 tsp Cajun seasoning
- 1/2 tsp smoked paprika
- 1/2 tsp dried thyme
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, about 5 minutes. Remove and set aside.
- In the same pot, sauté onion and bell pepper until softened, about 3 minutes. Add garlic, Cajun seasoning, smoked paprika, and thyme. Cook for 1 minute.
- Pour in chicken broth and bring to a boil. Add pasta and cook for 10 minutes, stirring occasionally.
- Reduce heat to low. Stir in heavy cream and Parmesan cheese. Add the cooked sausage back to the pot.
- Season with salt and black pepper. Simmer for 2 minutes until creamy. Garnish with fresh parsley before serving.
Notes
- Adjust Cajun seasoning for more or less spice.
- Substitute half-and-half for heavy cream if needed.
- Store leftovers in an airtight container for up to 3 days.
