Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 bell pepper, sliced
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Season chicken with Cajun seasoning.
  2. Heat olive oil in a pan and cook chicken until browned (5-6 minutes per side).
  3. Remove chicken and sauté bell pepper and corn for 3-4 minutes.
  4. Add heavy cream, chicken broth, garlic powder, salt, and black pepper.
  5. Simmer for 5 minutes until slightly thickened.
  6. Return chicken to the pan and cook for 2 more minutes.
  7. Serve hot.
