- 1 can (15 oz) chickpeas, drained and dried

- 4 oz feta cheese
- 2 cloves roasted garlic
- 1/4 cup heavy cream
- 1/2 cup chicken broth
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Season chicken with Cajun seasoning. Sear in a pan until fully cooked (5-6 minutes per side). Slice into strips.
- Toss chickpeas with olive oil and roast at 400°F for 20 minutes until crispy.
- Blend feta, roasted garlic, and heavy cream until smooth.
- Heat chicken broth in a pan, then stir in the whipped feta mixture until creamy.
- Add cooked pasta and chicken to the sauce, tossing to combine.
- Top with crispy chickpeas before serving.
