- 8 oz penne pasta
- 2 boneless, skinless chicken breasts, sliced
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Season chicken with Cajun seasoning.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken until browned and fully cooked. Remove and set aside.
- In the same skillet, sauté bell peppers, onion, and garlic until softened.
- Pour in heavy cream and chicken broth. Stir and simmer for 3-4 minutes.
- Add Parmesan cheese and stir until melted and smooth.
- Return chicken to the skillet and mix with the sauce.
- Toss in cooked pasta and stir until well coated.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.

- Use half-and-half instead of heavy cream for a lighter version.
