Ingredients

- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts

- 2 tbsp chopped fresh parsley
- 1/4 cup orange juice
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large bowl, combine chickpeas, cranberries, walnuts, red onion, and parsley.
- In a small bowl, whisk together orange juice, olive oil, apple cider vinegar, honey, salt, and pepper.
- Pour the vinaigrette over the salad and toss gently to coat.
- Serve immediately or refrigerate for 30 minutes to let flavors blend.
Notes
- For extra crunch, toast the walnuts before adding them to the salad.
- If you prefer a sweeter vinaigrette, add more honey to taste.
