- 1 cup fresh spinach, chopped

- 2 tbsp olive oil

- 1 tsp dried thyme
Instructions
- Preheat oven to 375°F (190°C).
- Cut a pocket into each chicken breast.
- Stuff each breast with spinach, cranberries, and brie.
- Secure with toothpicks if needed.
- Season outside with salt, pepper, garlic powder, and thyme.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear chicken for 3 minutes per side until golden.
- Transfer skillet to oven and bake for 20 minutes or until fully cooked.
Notes
