Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup dried cranberries
  • 4 oz brie cheese, sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried thyme

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut a pocket into each chicken breast.
  3. Stuff each breast with spinach, cranberries, and brie.
  4. Secure with toothpicks if needed.
  5. Season outside with salt, pepper, garlic powder, and thyme.
  6. Heat olive oil in an oven-safe skillet over medium-high heat.
  7. Sear chicken for 3 minutes per side until golden.
  8. Transfer skillet to oven and bake for 20 minutes or until fully cooked.
