Description

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup fresh or frozen cranberries
  • 1 tbsp orange zest
  • 3/4 cup orange juice
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • For the glaze: 1 cup powdered sugar, 2 tbsp milk, 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. Add cranberries and orange zest, stirring to coat.
  4. In another bowl, whisk orange juice, oil, egg, and vanilla extract.
  5. Pour wet ingredients into dry ingredients. Stir until just combined.
  6. Pour batter into the prepared pan. Bake for 50-60 minutes, or until a toothpick comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.
  8. For the glaze, whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled bread.
