A comforting and easy-to-make lasagna soup cooked in a crockpot, packed with rich flavors and cheesy goodness.

- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1 (15 oz) can tomato sauce
- 4 cups beef broth
- 1 tbsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 8 oz lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
Instructions
- Brown the ground beef, onion, and garlic in a skillet over medium heat. Drain excess fat.
- Transfer the beef mixture to a crockpot.
- Add crushed tomatoes, tomato sauce, beef broth, Italian seasoning, salt, and pepper to the crockpot. Stir well.
- Cover and cook on low for 6 hours or high for 3 hours.
- Add broken lasagna noodles and cook for an additional 30 minutes, or until noodles are tender.
- Serve hot, topped with ricotta, mozzarella, and parmesan cheese.
Notes
- For a creamier texture, stir in extra ricotta cheese before serving.
- Substitute ground turkey for a lighter version.
- Store leftovers in an airtight container for up to 3 days.
