- 1 tablespoon baking powder

- 1 teaspoon salt
- 1/4 cup unsalted butter, cold and cubed
- 3/4 cup buttermilk
- 1 pound breakfast sausage
- 1/4 cup all-purpose flour (for gravy)
- 2 cups milk
- Salt and pepper to taste
Instructions
- Preheat your oven to 450°F (230°C).
- In a large bowl, combine 2 cups flour, baking powder, baking soda, and salt. Mix well.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the buttermilk until just combined. Do not overmix.
- Turn the dough out onto a floured surface and knead gently a few times until it comes together.
- Pat the dough into a 1-inch thick rectangle. Cut out biscuits using a biscuit cutter and place them on a baking sheet.
- Bake for 12-15 minutes or until golden brown.
- In a skillet over medium heat, cook the breakfast sausage until browned. Drain excess fat.
- Sprinkle 1/4 cup flour over the sausage and stir to combine, cooking for 1 minute.
- Slowly whisk in the milk, stirring constantly until thickened. Season with salt and pepper to taste.
- Serve the biscuits warm topped with the country gravy.

- For extra flaky biscuits, handle the dough as little as possible.
- You can substitute the sausage with ground turkey or chicken for a lighter version.
