A classic dish featuring tender corned beef and flavorful cabbage.
Ingredients

- 3 lbs corned beef brisket
- 1 large head of cabbage, cut into wedges
- 4 large carrots, peeled and cut into chunks
- 4 potatoes, peeled and quartered
- 1 onion, quartered
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon black peppercorns
- 2 bay leaves
Instructions
- Place the corned beef in a large pot.
- Add the garlic, onion, peppercorns, and bay leaves.
- Pour in the beef broth until the meat is covered.
- Bring to a boil, then reduce heat and simmer for 2.5 hours.
- Add potatoes and carrots, cooking for an additional 30 minutes.
- Add cabbage and cook for 15 more minutes.
- Remove from heat and let cool slightly before slicing the beef.
- Serve hot with vegetables.
Notes
- Use a slow cooker for tender results.
- Leftovers make great sandwiches.
