Description
A classic dish made with corned beef, cabbage, and vegetables cooked slowly in a crock pot.
Ingredients

- 3–4 pounds corned beef brisket
- 1 medium onion, quartered
- 4 cloves garlic, minced
- 4 medium carrots, chopped
- 6 medium potatoes, quartered
- 1 small head of cabbage, cut into wedges
- 4 cups beef broth
- 2 tablespoons mustard seeds
- 1 tablespoon black peppercorns
- Salt to taste
Instructions
- Place the corned beef brisket in the crock pot.
- Add onion, garlic, carrots, and potatoes around the brisket.
- Pour beef broth over the ingredients.
- Sprinkle mustard seeds and peppercorns on top.
- Cover and cook on low for 8-10 hours or high for 4-5 hours.
- Add cabbage wedges during the last 2 hours of cooking.
- Once done, slice the brisket and serve with vegetables.
Notes
- Adjust cooking time based on the size of the brisket.
- For added flavor, consider adding bay leaves.
- Serve with mustard or horseradish if desired.
