  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a 9-inch square baking dish or a cast-iron skillet.
  2. In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, vegetable oil, and eggs until well blended.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  5. Pour the batter into the prepared baking dish and spread evenly.
  6. Bake in the preheated oven for 20 to 25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Notes
