Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat your oven to 400°F (200°C). Grease an 8-inch square baking pan or cast-iron skillet.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, combine the milk, vegetable oil, and eggs. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Pour the batter into the prepared baking pan and smooth the top.
  6. Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  7. Allow to cool for a few minutes before slicing and serving.

Notes

  • For a sweeter cornbread, increase the sugar to 1/3 cup.
  • Add in 1 cup of corn kernels for added texture and flavor.
  • Serve with butter and honey for a delightful treat.
