This classic cornbread is moist, fluffy, and has a slightly sweet flavor. Perfect as a side dish for chili or barbecue.

- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
Instructions
- Preheat your oven to 400°F (200°C). Grease an 8-inch square baking pan or cast-iron skillet.
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, vegetable oil, and eggs. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes before slicing and serving.
Notes
- For a sweeter cornbread, increase the sugar to 1/3 cup.
- Add in 1 cup of corn kernels for added texture and flavor.
- Serve with butter and honey for a delightful treat.
