Instructions
- Preheat your oven to 325°F (163°C).
- Place the corned beef brisket in a large roasting pan, fat side up.
- In a bowl, combine the beef broth, brown sugar, Dijon mustard, minced garlic, and black peppercorns. Mix well.
- Pour the mixture over the brisket in the roasting pan. Scatter the quartered onion and bay leaves around the brisket.
- Cover the roasting pan tightly with aluminum foil.
- Bake in the preheated oven for 2.5 to 3 hours, or until the meat is fork-tender.
- If using, add carrots and potatoes to the pan halfway through cooking, allowing them to cook alongside the brisket.

- Serve with the carrots and potatoes, drizzled with the cooking liquid.
