Ingredients

  • 1 lb boneless chicken breast, sliced
  • 2 tbsp teriyaki sauce
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1/2 cup snap peas
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 cup cooked wild rice
  • 1 tbsp sesame seeds (optional)

Instructions

  1. Heat olive oil in a large pan over medium-high heat.
  2. Add chicken and cook until browned, about 5-7 minutes.
  3. Add garlic and ginger, stir for 30 seconds.
  4. Add all vegetables and stir-fry for 4-5 minutes until crisp-tender.
  5. Pour teriyaki sauce over the mixture and stir well to coat.
  6. Cook for another 2 minutes until sauce thickens slightly.
  7. Serve over cooked wild rice.
  8. Sprinkle with sesame seeds if desired.

Notes

  • For extra crunch, add cashews or almonds.
  • Swap chicken for tofu to make it vegetarian.
  • Use low-sodium teriyaki sauce if preferred.
