Description
A vibrant and flavorful teriyaki chicken stir-fry packed with colorful vegetables and served with wild rice.
Ingredients

- 1 lb boneless chicken breast, sliced
- 2 tbsp teriyaki sauce
- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 1/2 cup snap peas
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 cup cooked wild rice
- 1 tbsp sesame seeds (optional)
Instructions
- Heat olive oil in a large pan over medium-high heat.
- Add chicken and cook until browned, about 5-7 minutes.
- Add garlic and ginger, stir for 30 seconds.
- Add all vegetables and stir-fry for 4-5 minutes until crisp-tender.
- Pour teriyaki sauce over the mixture and stir well to coat.
- Cook for another 2 minutes until sauce thickens slightly.
- Serve over cooked wild rice.
- Sprinkle with sesame seeds if desired.
Notes
- For extra crunch, add cashews or almonds.
- Swap chicken for tofu to make it vegetarian.
- Use low-sodium teriyaki sauce if preferred.
- Leftovers keep well refrigerated for 2 days.
