- 1 lb beef stew meat
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef stew meat and brown on all sides.
- Add chopped onion and minced garlic, sauté until fragrant.
- Pour in beef broth and bring to a simmer.
- Add carrots, potatoes, thyme, rosemary, salt, and pepper.
- Cover and simmer for 1.5 hours until meat is tender.
- Adjust seasoning if needed and serve hot.
Notes
- For a thicker stew, mix 1 tbsp flour with 2 tbsp water and stir into the stew before serving.
- You can add other vegetables like celery or peas.
