These refreshing coconut popsicles are the perfect treat for hot summer days. Made with creamy coconut milk and a hint of sweetness, these popsicles are easy to make and incredibly delicious.
Ingredients

- 1 can (13.5 oz) coconut milk
- 1/2 cup sweetened condensed milk
- 1/2 cup coconut water
- 1 teaspoon vanilla extract
- 1/2 cup shredded coconut (optional)
- Pinch of salt
Instructions
- In a mixing bowl, whisk together the coconut milk, sweetened condensed milk, coconut water, vanilla extract, and a pinch of salt until smooth.
- If using, stir in the shredded coconut until evenly distributed.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert sticks and freeze for at least 6 hours or until solid.
- To release the popsicles, run warm water over the outside of the molds for a few seconds before pulling the popsicles out.
Notes
- For extra flavor, you can add diced fruit or berries to the mixture before freezing.
- These popsicles can be stored in the freezer for up to 2 weeks.
