Ingredients

  • 1/2 cup sweetened condensed milk
  • 1/2 cup coconut water
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut (optional)
  • Pinch of salt

Instructions

  1. In a mixing bowl, whisk together the coconut milk, sweetened condensed milk, coconut water, vanilla extract, and a pinch of salt until smooth.
  2. If using, stir in the shredded coconut until evenly distributed.
  3. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  4. Insert sticks and freeze for at least 6 hours or until solid.
  5. To release the popsicles, run warm water over the outside of the molds for a few seconds before pulling the popsicles out.

Notes

  • For extra flavor, you can add diced fruit or berries to the mixture before freezing.
