- 500g white fish fillets (cut into chunks)
- 1 can (400ml) coconut milk
- 200g fresh spinach
- 1 onion (finely chopped)
- 2 garlic cloves (minced)
- 1 tbsp ginger (grated)
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tbsp vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a large pan over medium heat.
- Add onion, garlic, and ginger. Sauté until soft.
- Stir in curry powder, turmeric, and cumin. Cook for 1 minute.
- Pour in coconut milk and bring to a simmer.
- Add fish chunks and cook for 5 minutes.
- Add spinach and cook until wilted, about 2 minutes.
- Season with salt and garnish with cilantro.
- Serve hot with rice or bread.
Notes
- Use firm white fish like cod or haddock.
- Adjust spice levels to your preference.
- Fresh spinach can be replaced with frozen spinach if needed.
