Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp red curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 mango, diced
  • 1 lime, juiced
  • 1 tbsp fish sauce
  • 1 tsp brown sugar
  • Fresh cilantro, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add onion, garlic, and ginger. Sauté for 2 minutes.
  3. Stir in red curry paste and cook for 1 minute.
  4. Pour in coconut milk, fish sauce, and brown sugar. Bring to a simmer.
  5. Add salmon fillets and cook for 6-8 minutes, until salmon is flaky.
  6. Stir in diced mango and lime juice.
  7. Garnish with cilantro and serve with rice or noodles.

Notes

  • Adjust curry paste for more or less spice.
  • Use fresh mango for the best flavor.
  • Replace fish sauce with soy sauce if preferred.
