- 2 salmon fillets (6 oz each)
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp red curry paste
- 1 can (13.5 oz) coconut milk
- 1 mango, diced
- 1 lime, juiced
- 1 tbsp fish sauce
- 1 tsp brown sugar
- Fresh cilantro, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Add onion, garlic, and ginger. Sauté for 2 minutes.
- Stir in red curry paste and cook for 1 minute.
- Pour in coconut milk, fish sauce, and brown sugar. Bring to a simmer.
- Add salmon fillets and cook for 6-8 minutes, until salmon is flaky.
- Stir in diced mango and lime juice.
- Garnish with cilantro and serve with rice or noodles.
Notes
- Adjust curry paste for more or less spice.
- Use fresh mango for the best flavor.
- Replace fish sauce with soy sauce if preferred.
