- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 1/4 cup granulated sugar
- 1 (14 oz) can coconut milk
- 1/2 cup heavy cream
- 1/2 cup granulated sugar
- 2 large egg yolks
- 2 tbsp cornstarch
- 1 tsp vanilla extract
- 1 cup shredded coconut
- 1 cup whipped cream
Instructions
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs, melted butter, and sugar. Press into a lined 8×8-inch pan.
- Bake crust for 10 minutes, then let cool.
- In a saucepan, heat coconut milk and heavy cream over medium heat.
- Whisk sugar, egg yolks, and cornstarch in a bowl. Slowly add to the saucepan, stirring constantly.
- Cook until thickened, then remove from heat and stir in vanilla and shredded coconut.
- Pour filling over the crust and chill for 2 hours.
- Top with whipped cream and extra shredded coconut before serving.
Notes
- Use full-fat coconut milk for the best texture.
- Chill bars for at least 2 hours before cutting.
- Store leftovers in the refrigerator.
