  • 2 boneless, skinless chicken breasts
  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 tbsp coconut oil
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp ginger, grated
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Heat coconut oil in a large skillet over medium heat.
  2. Season chicken with salt and pepper, then cook for 5-6 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, add garlic and ginger, sauté for 30 seconds until fragrant.
  4. Stir in rice, coconut milk, soy sauce, and honey. Bring to a simmer.
  5. Return chicken to the skillet, cover, and cook on low heat for 20 minutes until rice is tender.
  6. Garnish with fresh cilantro before serving.
