Ingredients

- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk
- 1/2 cup butter
- Salt and pepper to taste
- Chives for garnish
Instructions
- In a large pot, melt butter over medium heat.
- Add onions and garlic; sauté until soft.
- Add diced potatoes and vegetable broth; bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 20 minutes.
- Use a potato masher to mash the potatoes to your desired consistency.
- Stir in milk, salt, and pepper; heat through.
- Serve hot, garnished with chives.

- For a creamier soup, blend part of the soup.
