Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 32 oz cream cheese, softened
  • 1 1/4 cups sugar
  • 1 tsp vanilla extract
  • 4 eggs
  • 1/2 cup sour cream
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup sugar
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into the bottom of a 9-inch springform pan.
  3. Bake crust for 10 minutes, then let cool.
  4. Beat cream cheese, 1 1/4 cups sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in sour cream until fully combined.
  7. Pour filling over the crust and bake for 60-70 minutes until set.
  8. Let cheesecake cool, then refrigerate for at least 4 hours.
  9. For the berry sauce, cook berries, 1/4 cup sugar, and lemon juice over medium heat until thickened.
  10. Serve cheesecake topped with berry sauce.
