Ingredients

  • 1 whole chicken (about 4 lbs)
  • 8 cups of water
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups egg noodles
  • Salt to taste
  • Pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken in a large pot and cover with water.
  2. Add carrots, celery, onion, and garlic.
  3. Bring to a boil, then reduce heat and simmer for 1 hour.
  4. Remove the chicken and let it cool. Strain the broth.
  5. Shred the chicken into bite-sized pieces.
  6. Return the broth to the pot and bring to a boil.
  7. Add egg noodles and cook until tender, about 8 minutes.
  8. Add shredded chicken back to the pot.
  9. Season with salt and pepper.
  10. Serve hot, garnished with fresh parsley.

Notes

  • You can use rotisserie chicken for a quicker option.
  • Feel free to add more vegetables like peas or corn.
