Ingredients

  • 1 tsp salt
  • 1 cup unsalted butter, chilled and cubed
  • 68 tbsp ice water
  • 67 medium apples, peeled and sliced
  • 3/4 cup granulated sugar
  • 2 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tbsp unsalted butter, diced

Instructions

  1. Mix flour and salt in a bowl. Cut in butter until mixture resembles coarse crumbs.
  2. Gradually add ice water, stirring until dough forms.
  3. Divide dough into two discs, wrap in plastic, and chill for 1 hour.
  4. Preheat oven to 375°F (190°C).
  5. Roll out one dough disc and fit into a pie dish.
  6. In a bowl, toss apples with sugar, lemon juice, cinnamon, and nutmeg.
  7. Pour apple filling into the crust and dot with diced butter.
  8. Roll out the second dough disc and place over filling. Seal edges and cut slits for steam.
  9. Bake for 45-50 minutes until golden brown. Let cool before serving.
